In 1900, in the 1st edition of the Guide,
the Million establishment already got top billing and people came from throughout
the region to enjoy truffle-stuffed poultry and lobster.
Worthy successor to
Philippe Million, under whom he studied
his craft, Chef José de Anacleto, a native of Portugal, keenly plays the card of Savoyard tradition without forgetting the great classics of
French gastronomy.
At the whim of his imagination
and the day’s market offerings: timbale of crayfish tails and snails in garlic butter, veal sweetbreads braised in Madeira wine
with split peas, fillet of grilled whitefish from Lake Geneva
with Sichuan pepper juice... all to be enjoyed in the comfort
of the cosy dining room or on the terrace on sunny days.

Before leaving for the United States, I had the chance
to work with the great masters of French cuisine, Philippe
Million, Gaston Lenôtre and Michel Guérard.
Backed by this great experience, I successfully opened
the Restaurant Million in Charleston, South Carolina,
which was one of the first Relais Gourmands in the USA.
Then came the Long Room Club and the popular McCrady’s Tavern. Fate brought me back to Albertville where I did my apprenticeship. I am proud today
